Apple Salsa with Cinnamon Chips

Apple Salsa Ingredients:

1 Sweet HoneyCrisp Apple, cored and diced 1 Tart GrannySmith Apple, cored and diced Zest from Fresh Lime 4 Tbsp Lime Juice 4 Tbsp Lindsey's Sweet Apple Cider 1/2 Red Onion, diced 1 Fresh Jalapeno, diced 2 Tbl Fresh Cilantro, minced 1 Tbl Extra Virgin Olive Oil 1 -2 Tbl Raw Honey 1-2 Tbl Fresh Ginger, peeled and diced (may use crystalized ginger) Salt and Pepper to taste

Instructions:

  1. Combine all ingredients

  2. Stir well

  3. Refrigerate for 3 hours or overnight

  4. Serve with Cinnamon Chips (recipe found below)

Cinnamon Chip Ingredients:

8 Flour Tortillas, 7-8 inch diameter 1 Tbl Water 1/4 cup Sugar 2 tsp Ground Cinnamon

Instructions:

  1. Brush Tortillas lightly with water.

  2. Combine sugar and cinnamon and sprinkle over tortillas.

  3. Cut each into eight wedges and place in a single layer on ungreased baking sheet

  4. Bake at 400­° for 6-8 minutes or until lightly browned.

  5. Cool and serve with Apple Salsa
